Mushroom Walnut Meat Tacos

Prepare to be amazed by this taco meat alternative. This recipe will have you dancing in the kitchen with its unbeatable flavor. Best of all, it's incredibly easy to make.

What you'll need:
1 1/4 cups shelled walnuts
6 Baby Bella mushrooms
2 teaspoons paprika
1/2 teaspoon cumin
1 teaspoon salt
1 tablespoon tomato paste
4 cloves of garlic
1/4 cup water
1 tablespoon olive oil
1 tsp cayenne (optional)

cashew cheese
Steps:
1. Soak walnuts in water for at least 30 minutes After soaking drain water and place soaked walnuts in food processor. Pulse them until they reach a grain-like texture and place them in a medium bowl.
2. Place mushrooms in food processor and pulse until finely chopped. Transfer the finely chopped mushrooms into the bowl with walnuts. Mix the walnuts and mushrooms together until combined.
3. Mince garlic and set aside. Place paprika, cumin, and salt in a small bowl and mix together. If you like some spice add the optional cayenne at this time to the seasoning mixture.
4. Heat olive oil in a medium sauté pan on medium heat and add garlic. Cook until fragrant.
5. Add walnut and mushroom mixture to the pan and cook for about 60 seconds. Add the water, tomato paste, and seasonings at this time. Sauté the mixture for about 3-5 minutes. Taste your mixture, salt and pepper to taste. Enjoy your taco meat with street corn tortillas, pico de gallo, and cashew cheese!
