Vegan Banana Pancakes

What you'll need:
1 medium ripe banana
1 1/2 tablespoons of grapeseed oil
1 1/2 cups gluten-free flour
1 cup coconut milk
1 tablespoon baking baking powder
1/2 teaspoon table salt
1/2 cup water
1/4 cup chopped walnuts (optional)
1/2 teaspoon of cinnamon (optional)
Steps:
1. In a large bowl, combine all dry ingredients. Use a whisk to combine the dry ingredients.
2. Combine coconut milk and water before adding to dry mixture 1/2c at a time, mixing with spoon in between until just combined.

3. Mash banana with a fork and then add to pancake mixture. If you want to spice up your pancakes with chopped walnuts or cinnamon, add at this time and mix until just combined.
4. Heat 1/2 tablespoon of grapeseed oil at a time over medium heat. Once oil is heated, add 1/4 cup of pancake mix to skillet and flip when you see bubbles form. Repeat for each pancake.



5. Enjoy with some vegan butter and maple syrup!
