Vegan Jackfruit BBQ Sliders

Jackfruit and it's ability to soak up flavors like nobody's business makes it the perfect canvas for this BBQ masterpiece.

What you'll need:
Vegan Rolls
You can use any vegan rolls you prefer, I made mine using a recipe by Minimalist Baker. Slaw
1 cup chopped white cabbage
2 cups chopped red cabbage
1 tablespoon Dijon mustard
1/4 cup maple syrup
1/2 lime juiced BBQ Jackfruit
2-20oz cans young green jackfruit
1 tablespoon Dijon mustard
1/2 teaspoon cumin
1/4 teaspoon coriander
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
BBQ sauce
1-2 tablespoons grapeseed oil for sautéing
Steps:
Prepare coleslaw by chopping red and white cabbage to preferred size. You can also place cabbage into a food processor and pulse until cabbage is desired size. Place cabbage into a medium-large bowl with a lid.
Add remaining slaw ingredients (Dijon mustard, maple syrup and lime juice) to a small bowl and whisk together. Add mixture to the bowl with the cabbage, cover with lid, and shake until cabbage is evenly coated. Place in fridge for marinating while preparing BBQ jackfruit.
Rinse and drain jackfruit.
Add remaining BBQ jackfruit ingredients (Dijon mustard, cumin, coriander, garlic powder, onion powder, salt, and 1 tablespoon BBQ sauce) to a small bowl and whisk together.
Add mixture to a medium-large bowl with a lid and add drained jackfruit. Massage the mixture onto the jackfruit, place lid on bowl, and shake until the jackfruit is evenly coated with the mixture. Place in the fridge to marinate for at least 15 minutes.
After 15 minutes, heat 2 tablespoons of grapeseed oil in a large sauté pan over medium heat. Add jackfruit once oil is heated and sauté for approximately 60 seconds before covering pan. If the sauce is burning, reduce heat.
Allow jackfruit to heat in covered pan for 2 minutes before uncovering and adjusting heat as needed.p
Remove lid and begin to chop jackfruit with spatula until it resembles pulled pork.
Add desired amount of BBQ sauce and continue to sauté jackfruit for another 2 minutes before removing from heat.
Assemble your slider! Slice vegan roll in half, add BBQ jackfruit and slaw, and enjoy! Option to toast to your roll.

These jackfruit sliders are a delicious modern, healthy twist to those pulled pork sandwiches us Southerners grew up on. They are easy to make and won't take up too much of your time.
